MD: There’s one place I will pay over $10 for a hot dog, and you are about to read about it. Why? Because I’ve seen whole pigs waiting to be chopped up here, and the difference between the lip-and-tail bits frankfurter you might enjoy at a baseball game and the haute hot dog at Cochon Butcher is huge. We’re talking balls-to-the-wall, Cajun-inspired charcuterie, baby, with homemade relishes and well-versed culinary techniques. Not to mention a fine selection of inventive sandwiches, pâtés and other meaty homages. Or, it can also be a wine bar if you want, with a great selection of libations as well as small plates. Cochon Butcher is a brash, classy joint, and I like it.
